Hello Friends, I just wanted to share my “go to” quick salad. I find it so fresh and tasty. Using the best ingredients and fresh ground pepper & shaved parmesan make all the difference. I hope you will agree. Hugs, Kathy

simple little salad

  1. lettuce
  2. cucumber
  3. tomato
  4. avocado
  5. hard boiled egg
  6. chicken (usually from leftovers)
  7. parmesan
  8. lemon
  9. olive oil
  1. wash lettuce really good, chop & place a damp paper towel on top of lettuce, put in fridge while chopping your ingredients so the lettuce gets nice and crisp. chop veggies. cook eggs & chop chicken. squeeze fresh lemon on salad and sprinkle with olive oil. add fresh salt and pepper. garnish with shaving of parmesan (use a vegetable peeler to shave fresh parmesan).
  1. if you can find heirloom tomatoes it's worth every penny. they add so much flavor.

    Hi Kathy,

    This salad looks fabulous. I happen to have hard boiled eggs left over from my bridge event yesterday. If I can get some ripe avocados, I think I will try it this evening.

    I made this salad yesterday and it was so yummy! I used canned (in water) white chunks of tuna fish that I already had in the frig.
