Warm "Ramen" Noodle Salad

a spicy twist on the typical "ramen" noodle salad
SEASONING SAUCE
- 2 TB dark soy sauce
- 2 TB dry sherry
- 2 tsp vinegar
- 2 tsp sugar
- 2 tsp sesame oil
- 2 TB water
- 2 tsp arrowroot powder or cornstarch
- ---------------------------------------------
- 1 head broccoli (cut into pieces, peel & cut stem)
- 1 head of cabbage (cut in half & cut into long skinny strips)
- 1 package of curly japanese noodles
- 1 bag of pre shredded carrots
- 1 bag of bean sprouts
- 1 cup of slivered almonds toasted
- 1/2 cup of sunflower seeds
- 6-8 pieces of dry red pepper
- 2 TBS oil (high heat)
Instructions
- boil water & blanch broccoli for 30 seconds, set aside. prepare seasoning sauce, set aside. wipe red pepper with a paper towel, cut tips and remove seeds (if you don't like your food to spicy...I always use the seeds) heat a wok or large heavy skillet over medium high heat until hot; add 2 TB of oil & swirl. toss in dry red peppers & press them into the oil until the peppers are almost black. turn heat to medium, add cabbage and stir fry for about 2 minutes. Add carrots, bean sprouts, stir for one more minute. turn heat up to high and add seasoning sauce and stir until the sauce thickens, turn heat off. Break noodles into smaller pieces, add to pan and toss in the nuts. remove red peppers and serve
